Egg, Avocado and Parmesan Cheese Toast

I used to despise avocado. Like, I would gag at the mere sight of guacamole. I can’t say for sure what changed, or when I changed, but guacamole doesn’t make me gag anymore. In fact, I’ll actually EAT some with some nacho chips when we go out.

One morning I got up EXTRA early with some of my teammates to get some work done before our full-time jobs started. Because I got up soooo early, I was crazy hungry by 6:30am. A friend of mine gave me an avocado when I was over this past weekend, so I decided to see what all the “avocado toast” raves were about.

What have I been missing out on?

avocado toast breakfast

1 tsp lemon juice
1/2 avocado
1/4 tsp salt
1/4 tsp pepper
1 egg
1 slice Ezekiel bread (or whole grain bread)
1/2 tbsp chopped cilantro
1/2 tbsp grated Parmesan cheese
Olive oil for coating pan

Heat oil in pan over medium heat, coating entire bottom of pan.
Crack egg into pan, break yoke (for over-hard eggs).
While egg is cooking, put bread in toaster and start toasting.
Mash the avocado, lemon juice, salt and pepper together in a small bowl.
Chop cilantro.
When toast is done, spread avocado mash over entire slice of bread.
When egg is done cooking (a couple of minutes on each side) remove from pan and lay on top of avocado mash.
Sprinkle Parmesan cheese on top of egg.
Sprinkle cilantro on top of Parmesan cheese.
